What is desi ghee? Clarified butter, made the bilona way?

In English, desi ghee is simply clarified butter, but the bilona method is what separates real desi ghee from the machine-made ghee on a supermarket shelf. Fresh cow milk is fermented overnight into dahi (curd), hand-beaten into makhan (cultured butter), then slow-cooked over a real wood fire until golden ghee separates on its own.

No creaming machines, no factory heat. We follow this exact 48-hour, small-batch process every time, and it takes 25 to 30 litres of fresh cow milk to make a single kilogram.
